![]() This dish has the WOW factor and may just win your lover over on Valentine's Day.....or any day of the week! If you like calamari, you'll love this dish. This recipe is somewhat spicy, so if you can't take the heat...omit the red pepper - still DELISH! There's nothing better than having a few dishes up your sleeve like this restaurant quality dish of "pretty as a picture" pasta! Ingredients: 3 ripe medium sized tomatoes 4 cloves of garlic (yes I said 4) 1 teaspoon sea salt 1/2 teaspoon fresh black pepper 1/2 teaspoon red pepper flakes 1 teaspoon olive oil 3 tablespoons parmesan cheese 1/4 cup red wine (optional) small bunch of basil, torn - about 6-8 leaves 2 cups calamari - cleaned (rings & tentacles) - boiled for 8 minutes or until tender (set aside) Angel hair pasta (I used 1/2 lb for two people) - cooked aldente as directed! Directions: Heat oil over medium heat in a small saute pan. Add garlic, saute until fragrant (about 1 minute). Don't brown! Add tomatoes, salt, pepper and red pepper flakes, stir. Continue to saute tomatoes until they begin to fall apart. Add red wine, and heat for 5-8 more minutes until flavors are combined, and tomatoes have become a thick & chunky sauce. Add cooked calamari, stir. (you may also like to add 1/4 cup frozen peas at this point, stir. If sauce is too thick add a few tbs. water & stir. Take sauce off of heat, put pasta on plates, spoon over sauce, garnish with basil & parmesan cheese. Enjoy!
