Kale is PACKED with Vitamin A & C, is low in carbs and has only 33 calories per cup!
It's delicious too. Here's a nice Spring salad recipe I love to make and hope you enjoy. Try substituting any of your favorite fruits, nuts, cheeses and still know, you're getting TONS of vitamins either way.
2 Cups fresh, washed Kale - Chopped
1/4 Cup fresh Mandarin Orange Segments
1/2 Cup cooked Beets
10 Cherry tomatoes - halved
1/4 Cup halved pecans
1/4 Cup sliced red onion
1/4 Cup Feta Cheese - cubed
1/4 Cup EVOO or Canola Oil
1/4 Cup Balsamic Vinegar
Sea Salt & Fresh ground pepper to taste
Combine all ingredients, drizzle with oil & vinegar, salt & pepper to taste! Enjoy my foodie friends!
