Gluten-Free Marshmallow Cream Cheese Whoopie Pies!

Have some fun with Gluten-Free!  Most people think of gluten-free as boring, not so tasty among other common opinions.....Until you've tried gluten-free foods.  Do it for a week - I dare you.  Some have reported a "less bloated" feeling, while others have claimed to just feel better all around.

Go ahead, grab all your gluten-free ingredients (look at the labels) and try these babies!  They are so good - you won't believe you're eating gluten-free.







Ingredients

1 Stick Butter – plus extra for greasing or Pam Spray

(but Pam BAKING Spray  is NOT gluten free)

½ Cup Firmly Packed Brown Sugar

2 Eggs

2 Tsp. Vanilla Extract

1 Cup Gluten-Free Flour-with  xanthan gum added (or add 1 tsp. xanthan gum)

1 tsp.  Glycerin

1/2 tsp. salt

1 tsp.  Gluten-Free baking powder

½ tsp. Gluten-Free baking soda

1/3 Cup gluten-Free unsweetened cocoa powder (I love using dark).

2/3 Cup Milk

 

Filling

 

6 Tbsp. Butter, softened

2 Cups Confectioners Sugar

½ Cup Cream Cheese, softened

½ Cup Gluten-Free Marshmallow Fluff

 

Directions

 

  1. Preheat oven to 350 degrees.  Grease 2 whoopie pie pans or regular cookie sheets. (If you only have 1 whoopie pie pan – bake 2 batches.

     

  2. In large mixing bowl, cream butter & Sugar together for 1 minute.

     

  3. Add Eggs, Vanilla & Glycerin.

     

  4.   In small bowl whisk together flour, baking soda, baking powder, cocoa & salt.

     

  5. Now add ½ the dry ingredients to the batter, blend for 1 minute.

     

  6. 7.  Add milk & blend 1 more minute….then add remaining dry ingredients to batter & mix until combined about 2 minutes.

     

  7. Use a small scoop & drop batter (20 walnut sized balls) onto whoopie pie tins or baking sheet.

     

  8. Bake for approximately 8-10 minutes.  Take out & let cool.

     

  9. To make filling, whip together all filling ingredients until creamy.

     

  10. To assemble, spread or pipe the filling mixture on flat side of half the cakes.  (You can drizzle the filling with raspberry sauce or chocolate), 

     

  11. Top with the rest of the cakes, use sprinkles on sides if you want, arrange on serving platter and viola!  Delicious Gluten-Free WHOOPIE PIES!!

    I'm the youngest of six girls, happily married and have two wonderful sons, two new amazing granddaughters (OMG)...and a fabulous French Bulldog Gizmo.  I enjoy spending quality time with friends and family, reading home improvement mags, playing with my dog, gardening, fishing, cooking & baking (of course), entertaining and helping others in need.  I write poetry and dabble in painting and other artwork.  The joy of cooking and designing food has always been a part of my life......and quite naturally.....The Domestic Stylist was finally born! Rebranded to EatD'Licious - D'Licious Chef Services, Confections & Events - October 2016! (WooHoo).

    I'm a personal chef and our services extend beyond just that.  We also provide meals to the home-bound and elderly, design fabulous wedding and event cakes, cookies, pastries and desserts!  I hope to share all of my passions here with you!
