D'Licious Salted Caramel Banana Cake

Seriously - one of my very best cakes and not a secret anymore:)

Save room for this one...and enjoy a serious taste of home!  When you dive into this rich, moist and D'Licious dessert....your taste buds will thank you:)

As a kid I used to love Sara Lee Banana Cake that my mom used to buy at our local grocery store.  It was our treat for the week.  My mom shared my love of sweets...so we would literally devour the entire cake in a day or two.  They were small - don't judge!

This recipe, I have to say is way better.....and times have changed.  I'd still buy that cake though...and let the memories of my mom linger.

Here's my recipe....I hope you love it as much as I do.


Ingredients
  • 1⅓ cup bananas, mashed
  • 1½ cups milk
  • 2½ tablespoons lemon juice, divided
  • 3 cups flour
  • ½ tablespoon baking soda
  • ¼ teaspoon salt
  • ⅔ cup butter, softened
  • 1 cup white sugar
  • ½ cup brown sugar
  • 3 large eggs
  • 1 teaspoons vanilla
  • ½ Cup Raisins
 
Topping Idea:  Vanilla Ice Cream & Salted Caramel Sauce (add a few pecans or bits of toffee) OMGoodness!
 
Frosting (Optional)
 8 oz cream cheese
  • ⅓ cup butter, softened
  • 3 - 3.5 cups powdered sugar
  • 1 teaspoon lemon juice
  • 1½ teaspoons lemon zest (from 1 lemon)
Instructions
 
  1. Preheat oven to 350°. Grease and flour a 9 x 13 pan.
  2. Place 1½ tablespoons lemon juice in a measuring cup. Top to 1½ cups with milk. Set aside.
  3. Mix together mashed banana with 1 tablespoon lemon juice, set aside.
  4. Beat together butter, brown and white sugar until combined. Add in eggs one at a time and vanilla. Mix on high until light and fluffy (almost the texture of frosting).
  5. Combine flour, baking soda and salt in a medium bowl. Alternate adding flour mixture and milk to egg mixture stirring just until combined. (Do not overmix). Fold in bananas and raisins. Pour into prepared pan.
  6. Put into the oven and reduce heat to 300 degrees. Bake 60 - 70 minutes (see note below) or just until toothpick inserted in center comes out clean (do not over bake).
  7. Remove from oven and cool completely.

Frosting
  1. Cream together butter & cream cheese until fluffy. Add in lemon zest and juice. Add powdered sugar a little at a time until you reach desired consistency. Spread over cooled cake.
Notes
Note: The cooking time on this cake may vary! Mine takes about 55 Mins. Check your cake at 50 minutes, if it isn't ready, continue cooking until a toothpick comes out clean (this can be up to an additional 10-20 minutes depending on your oven).

Rebranded to EatD'Licious - D'Licious Chef Services, Confections & Events - October 2016! (WooHoo).

    I'm a personal chef and our services extend beyond just that.  We also provide meals to the home-bound and elderly, design fabulous wedding and event cakes, cookies, pastries and desserts!  I hope to share all of my passions here with you!
